Lentil soup

On busy workdays dinner needs to be quick to cook, and also healthy. And it doesn´t hurt if it tastes good as well 😀 On these days soups are perfect! There are so many different soups, but one of my favourites is lentil soup 🙂

 

Lentil soup

1/2 yellow onion

1 carrot

3 – 4 potatoes

1 cup red lentils

1 vegetable stock cube

2 tbs tomato puree

salt & white pepper

1 tbs butter

about 1/2 l water

Peel and cut onion into smaller pieces. Melt butter in a saucepan and add the onion. Peel potatoes and carrot and cut into smaller pieces. Put them into the pan and stir. Then add water, stock cube, tomato puree, lentils, salt & pepper. Let boil until potatoes, carrot and lentils are soft, about 20 minutes. After abot half the time add a a tbs butter.
