Lentil soup, version 2
Soup. So delicious. So easy and cheap. I love soup, especially now in Autumn when it´s cold outdoors. I make lentil soup quite often, this is how I made it this time:
1 onion, chopped
2 potatoes, diced
1/2 dl leek, chopped
1 dl red lentils
1 vegetable stock cube
1 teaspoon turmeric
1 tablespoon tomato purée
- Heat butter in a saucepan. Add onion and let cook for a few minutes.
- Add potatoes and leek.
- Pour water in the saucepan and add stock cube and lentils.
- Let simmer for about 10 minutes, then add tomato puree, turmeric, black pepper and butter.
- Let simmer until potatoes and lentils are soft.
Usually I also add carrots in my lentil soup, like in THIS POST. But today I didn´t have any carrots at home.
