Lentil soup, version 2

Soup. So delicious. So easy and cheap. I love soup, especially now in Autumn when it´s cold outdoors. I make lentil soup quite often, this is how I made it this time:


Lentil soup

serves 2


1 onion, chopped

2 potatoes, diced

1/2 dl leek, chopped

1 dl red lentils

1 vegetable stock cube

1 teaspoon turmeric

some blackpepper

1 tablespoon tomato purée


  1. Heat butter in a saucepan. Add onion and let cook for a few minutes.
  2. Add potatoes and leek.
  3. Pour water in the saucepan and add stock cube and lentils.
  4. Let simmer for about 10 minutes, then add tomato puree, turmeric, black pepper and butter.
  5. Let simmer until potatoes and lentils are soft.


Usually I also add carrots in my lentil soup, like in THIS POST. But today I didn´t have any carrots at home.
