Vegetarian Stroganoff with carrot and halloumi

Hi 🙂 Fall is here and it´s no longer so hot outdoors. I love it! I thought I´d share an easy recipe of a vegetarian stroganoff.

Vegetarian Stroganoff with carrot and halloumi

1 onion diced

2 cloves of garlic (1 teaspoon minced garlic)

3 carrots diced

2 tablespoons butter

1 cup of broth

1 red pepper diced

1 cup creme fraiche (sour cream?)

3 sundried tomatoes diced

200 grams halloumi’

lemon

salt and black pepper

 

Instructions:

Melt the butter in a saucepan. Add the diced onion, garlic and carrots. Saute for a few minutes. Then add broth and let simmer until the carrots are starting to get soft. Add peppers,  sundried tomatoes and sour cream. Let simmer. Add more broth if needed.

Cut the halloumi into slices and fry them in a warm, dry pan. Add them into the sauce and stir. Add lemon, salt and black pepper.

Serve with full grain pasta and salad.
